Ingredients

  • 1 whole organic chicken weighing between 2 - 2.5 kilogram with giblets removed
  • 5 cloves of garlic 
  • 1 tablespoon of dried thyme or 1 teaspoon of fresh thyme
  • 2 tablespoons of tarragon 
  • 1 ½ tablespoon of fresh thyme
  • 1 tablespoon freshly ground black pepper
  • 4 tablespoons of extra-virgin olive oil for roasting
  • Juice from one lemon or lime (optional)
  • 2 cups chopped zucchini (optional)
  • 2 large sliced zucchini
  • 250 grams sliced cherry tomatoes
  • 2 tablespoons chopped fresh oregano (optional)
  • 1 teaspoon of kosher salt

Directions

Step 1: Bring on the heat!

Preheat the oven to 375 degrees F.

Tip:

A well-known way to time your roasting is to roast your chicken for 20 minutes per pound of its weight.

Step 2: Tie it up!

  1. Stuff garlic, onion, thyme, and tarragon into the chicken's cavity. 
  2. Hold the legs together and tie them using kitchen string, closing the opening of the cavity. 
  3. Lift the wings until they overlap with the breast. 
  4. Tie them in place by wrapping the string around the body and wings. 
  5. Rub generously with salt, oil, pepper, and lemon juice. 
  6. Place the whole bird breast-side down in a roasting pan.

Tip:

If you'd like your chicken to have crispy skin, the thing to do is apply an oil-based cooking spray to it before cooking. That will make the skin crispier and provide extra flavor to the meat.

Step 3: It's roasting time!

Divide your roasting process into three parts.

  1. First, roast for 25 minutes, and then turn it breast-side up.
  2. Roast for another 35 minutes while occasionally basting it with juices from the pan.
  3. At the 1-hour mark, add the zucchini and tomato slices to the pan and roast for an additional 30 mins or until the chicken is cooked through.

Tip:

Two ways to tell if your chicken is well roasted:

  1. With thermometer: Insert a clean food thermometer into the thickest part of the breast or the thigh of the chicken. If the temperature reads 180 degrees Fahrenheit or 82 degrees Celsius, it's done!
  2.  Without a thermometer: Insert a knife into the thickest part of the thigh of the chicken. If you can see juices running clear off the cut, it's ready!

Step 4: Carve and serve! 

  1. Carefully transfer the chicken to your cutting board and let it rest for about 10 minutes. 
  2. Remove the string, carve, serve and enjoy!
